How to Use Commercial Popcorn Machines

Using and cleaning a commercial popcorn machine is not difficult.  Most commercial popcorn machines come with three operating buttons or controls.  These are usually located at the top of the machine.  The front of the machine is the side containing the door or opening on the popper.

Button Functions

•    The first button is usually the heat switch also known as the kettle heat switch.  This button activates the heating element bringing the temperature to around 400 degrees.  When using your machine this button gets turned off when your popcorn is almost done popping.

•    The second button usually activates the motor.  This button turns on the motor that will activate the agitator.  The agitator keeps the kernels, salt and oil in constant motion to help prevent the popcorn from burning.

•    The third button activates the heat lamp or heating element.  Some machines have lamps or top heating elements that help keep the popcorn warm, dry and ready to serve.  Other machines have a heating element under the bottom tray or plate of the machine.  These are most effective because the heat comes up directly under the popcorn as it sits waiting to be served.

Timing and Ingredients

•    You should add the popcorn, salt, and oil before or within about 15 to 20 seconds after you turn on the heat switch.  You definitely do not want to have a kettle sitting there empty because the heating element reaches the desired temperature for popping within 30 seconds.

•    Oil should be added to the kettle first.  Wait a few seconds for the oil to melt a little then place the popcorn.  You can find pre portioned popcorn machine supply kits where popcorn maker supplies are sold.  These pre measured portions that already have oil included.  Cut the top part off and squeeze the oil up.  Allow the oil to fall into the kettle first then cut the rest off and pour the rest including the salt and oil.  Be very careful doing this and always have a pair of scissors handy to prevent accidents.  Be careful not to burn your hands.

•    When using loose kernels always follow the specific directions for that machine type.  The amount you can use depends on the size of your machine.  Too many kernels can cause the kernels to jam and burn.

Serving and Cleaning

•    Once the popcorn is done popping wait to turn off the motor.  You should however turn off the heat button if you are done using the machine for the time being.  Please note that there are many machines so always read the instructions that pertain to your unit.

•    Gently dump out any excess popcorn kernels left in the kettle.  Be careful not to break any of the fragile wires inside of the kettle.  Always use a scoop to serve the popcorn.

•    After all the popcorn has been served use a damp towel to clean off any excess oil and popcorn bits.  Only remove the kettle once the unit has had time to completely cool. Soap and water with a rag can be used to clean the kettle, but never soak the kettle in the sink. The exterior glass can be cleaning with a glass cleaning solution.
